Planked Bacon-Wrapped Chicken Thighs

Serve with grilled vegetables.

·       Cedar plank soaked in water at least one hour

·       8 boneless skinless chicken thighs

·       Bone Dust BBQ Seasoning

·       8 slices of good bacon

·       2 Tbsps. Bourbon

·       ½ cup BBQ sauce (I like Boozy Bacon from Stonewall Kitchens)

Preheat grill to medium heat. Evenly coat chicken with Bone Dust. Tightly roll the chicken up like jelly rolls, starting at the narrow end of each thigh.

Take one slice of bacon and spread it out onto a flat work surface. Place one chicken thigh at one end on the bacon and wrap the bacon tightly around each chicken thigh. Evenly space thighs on the plank. Place plank on the grill and then close lid. Resist the urge to peek. Remember white smoke is good, black is bad. 

Plank-bake the chicken for 15 to 30 minutes. Meanwhile, combine the bourbon and the BBQ sauce. Baste the chicken liberally and evenly for 10 to 15 minutes more so that the meat gets sticky and cooks through.
