This is a bit of a science experiment.
• Three parts good olive oil
• Two parts acid such as vinegar, lemon juice
• One part emulsifier such as mustard, yogurt, ketchup, jam
• Seasoning such as minced garlic, herbs salt pepper
If using raw garlic (and you should) place it in a strainer and run boiled water over it. This just reduces the edge raw garlic has. Place your ingredients a jar with a lid and shake.
