This recipe is an adaption of what my mother made when I was a child. She gave me the ingredient list over the phone and I copied it out on lined paper. Feel free to adapt it further. Things change, as they should.
- 2 Tbs. butter
- 2 Tbs. flour
- 1 cup of ketchup
- ½ cup of Beef stock
- 4 small onions sliced thin
- 2 medium carrots shredded
- Sliced mushrooms to your liking
- Garlic, salt, pepper and Worcestershire sauce
- Sirloin steak
In a medium high heat saucepan cook onions, carrots and mushrooms in butter until softened. Add flour and turn down the heat, simmer for at least 1 minute. Add the ketchup, garlic powder, Worcestershire and stock and simmer for a further few minutes until you have a nice sauce. Heat a cast iron frying pan to high. Season the steak with salt and pepper. Sear 2 minutes each side. Remove from stovetop and cover with sauce. Place in a 400° F oven and bake until bubbling maybe 15-20 minutes. Add fresh herbs if you have them.
