350° F Oven
• Mushrooms with stems pulled out
• Sharp cheese like cheddar
• Fresh or canned tomatoes
• Basil
• Parmesan cheese
This is a really simple and elegant snack or side dish. I don’t remember how I came up with this one but I have been making it for a long time. Clean as many mushrooms as you want to use, 3-4 per person. Snap out stems and use a spoon to hollow out a space for the cheese to sit. Cut cheese squares small enough to sit inside the mushroom. Cut tomato slices a similar size to sit on top of the cheese. Place a basil leaf on top and grate Parmesan on the top of everything. Place the stuffed mushrooms on a cooking sheet and bake in a moderate oven until the mushrooms are soft and bubbling maybe 15 minutes.
